As we approach the football season, many of us are thinking of simple, yet flavorful dishes we can serve guess that come over for the game, or that we can serve at a tailgate party. I have just the dish! Cajun food is the perfect accompaniment to football! Whether it’s Gumbo, Jambalaya or Red Beans and Rice, these one dish meals are a great choice to serve! Try this Jambalaya recipe that will please everyone and be a big hit at your party!

CAJUN CHICKEN & SAUSAGE JAMBALAYA

2 Tbsp extra virgin olive oil
1 1-2 lbs boneless, skinless chicken thighs or breasts, cut into pieces
2-14oz pkg. smoked link sausage (or Andouille) , cut into 1/4 inch slices
1 large onion, chopped
2 celery ribs, diced
1 bell pepper, diced
1-2 Tbsp SoLa Cajun Seasoning
1 1-2 cups long grain rice
1 (14 ounce) can diced tomatoes, with juice
2 cups chicken broth or stock
.5 cup chopped green onions

DIRECTIONS
Using a large, heavy pot on the stove, brown chicken at med-high until lightly browned; remove chicken from pot and pat dry. Cook sausage in same pot until lightly brown. Add onion, celery, and bell pepper and cook, stirring for about 5 minutes until onions are tender. Add rice, tomatoes with juice, broth and SoLa Cajun Seasoning. Bring to a boil and lower heat to med-low. Cook covered for 25-30 or until rice is tender. Serve with chopped green onions, if desired. Serves 6.
